This is the perfect meal for those down days – it may seem complicated, but this is one of those things where you can just throw it in the oven, grab a book and curl up on the sofa whilst you wait.
Not only that, it doesn’t use many pans – you just need a roasting tin and a knife.
You will need
• 8 sausages
• 1 yellow pepper
• 4 red onions
• 400g of chopped tomatoes (canned works!)
• 250ml vegetable stock
Heat the oven up to 220c/fan oven 200/gas mark 7.
Pop the sausages, pepper and onions onto a roasting tin and roast them for about 20 minutes.
Lower the oven slightly and add the tomatoes and the stock over the sausages. Season it with a little salt and pepper (or garlic) and stir well. Roast it for another 20 minutes.
If you’re really nibbly, serve with garlic bread!
