You will need:
Grab your foil and lay it on the counter top. Place your fish fillet inside - we're going to be turning the foil into 'pockets' so you will have to place one at a time !
Slice your shallot into small cubes and sprinkle over the top of the fish. Add a very small amount of butter - approx 1/4 of a teaspoon - Add a little bit of the salt, garlic and the herbs and finally sprinkle a small capful of olive oil over the top (1 teaspoon) .
Next, bring the sides of your foil up so they form a pyramid. Roll / fold the top down a little bit to seal it and scrunch the sides in to make a parcel. This will help seal the steam from the fish and keep the delicious juices inside!
Cook it for about 25 - 30 minutes on gas mark 6 (200 Fahrenheit) until fully cooked.
