You will need:
Heat oven to 450° or gas mark 8. Next, make sure your chicken is nice and dry and rub it with the salt and pepper. You can go as heavy handed as you would like for this !
Grab your potatoes and slice them into halves (or quarters) have the flat (so the cut) side facing upwards and pop your chicken on the top. Roast them at 450 for about an hour. If the juices coming from the chicken do not run clear, cook it for a little longer. (I recommend getting a food thermometer to test the temperature. The thickest part of the chickens leg should read 160 )
Drain the chicken juice into a pan and toss the spinach into it. During this time, let the chicken and the potatoes rest on the side - don't panic the vegetables won't take long ! Once wilted, plate them up between how ever many people you have and enjoy!
