This is very easy to make if you have frozen veggies! Not only that but you can make enough to freeze and have another day! If you feel up to it that day, I recommend giving it a go!
You will need:
• A dash of olive oil
• 300g leeks (diced)
• 8 rashers of streaky bacon or bacon bits
• 400g pasta penne
• 100g of soft cheese (I recommend Boursin as it’s a delicacy from home, but you can also use herb Philadelphia!)
Heat the oil in a pan and add the leeks. Add in a tiny amount of water and cook them on a low heat for 10 minutes until they are nice and soft. Chuck the bacon in with it and cook together until it’s up to your standards! (I prefer nice crunchy bacon, but some people like it a little under)
Cook the pasta until it’s nice and soft – again, some people have a preference for how they like their pasta cooking so I won’t give you a time for this. Drain it but store the ‘used’ water in a little mug for now.
Add the cheese into the leek and bacon mix, as well as a spoonful of the pasta water. Stir gently over a low heat until it’s melted – you can add any seasoning to this if you want.
Throw the sauce over the pasta and stir well – if it’s not liquid enough to cover the pasta, add a little more water to cover.
